39821.  UHT dairy spread is a product made from milk, cream, skimmilk, or nonfat milk solids, or any combination thereof, to which maybe added lactose, sodium caseinate, emulsifiers, stabilizers,stabilizing salts, and harmless coloring. The product shall beprocessed and packaged pursuant to Section 39701.39822.  UHT dairy spread shall contain not less than 30 percent milkfat and not more than six-tenths of 1 percent stabilizer andemulsifier combined by weight, unless otherwise stated on the label.
